Ingredients:

  • 1 package gluten-free spaghetti
  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup extra-virgin olive oil
  • Salt and pepper to taste
  • Optional toppings: cherry tomatoes, extra Parmesan cheese, toasted pine nuts

Instructions:

  1. Cook the gluten-free spaghetti according to the package instructions in a large pot of salted boiling water. Cook until al dente, usually about 8-10 minutes. Once cooked, drain the spaghetti and set aside.

  2. While the spaghetti is cooking, prepare the pesto sauce. In a food processor or blender, combine the fresh basil leaves, pine nuts, minced garlic, and grated Parmesan cheese. Pulse until the ingredients are finely chopped and well combined.

  3. With the food processor running, slowly drizzle in the extra-virgin olive oil until the pesto reaches your desired consistency. Season with salt and pepper to taste, and pulse to combine.
